you need 2 tender coconuts, vegetables of your choice- cut into tiny pieces, ground pepper, a tea spoon of cornflour, salt
separate the flesh from tender coconut water. i have used carrots, beans, Indian Spinach (basaLe), capsicum. cut a medium sized onion into tiny pieces( or you can grate them). heat oil. add the cut onions fry them until light brown, add the vegetables and toss them for a minute on high heat. add salt. add the tender coconut water. add cornflour. when the soup begins to thicken remove from fire. Sprinkle ground pepper and top up with pieces of the tender coconut flesh and serve hot either in tender coconut shell as shown in the picture or a bowl :-)
Children will surely enjoy this soup since it has a sweetish tang.
Today happens to be World Book day. The book in the picture is 'Maps for Lost lovers' by Nadeem Aslam. One of the best books i have read in recent times. Reads more like a poem than fiction.
